Oatmeal Cream Pies

This is it. The reason to consume a ridiculous amount of sugar and butter. The reason "the man" invented the toothbrush. The reason to ignore what the voices in your head are telling you. The reason to wear stretchy pants. The reason to be unreasonable.

This is Oatmeal Cream Pie.

Take a moment. Gather your thoughts. This. Is. Happening.

We have a tradition in our family. When it's your birthday, Mama (me) will try to make you whatever food your little heart desires.

My baby girl turned 15 this past weekend. She didn't want cake. She didn't want ice cream. She wanted my homemade oatmeal cream pies.

EJ at 2 years old and at 15 years old.

Even though she nearly killed me bringing her into the world and, really, she should be giving me a present on her birthday, I did what any good mama would do-- I made the dessert with copious amounts of sugar, butter, and love while telling her the gory story of her delivery.

Good times.

Oatmeal Cream Pies are a family favorite and I hope you enjoy the recipe as much as we do. Without further adieu, the recipe.

Oatmeal Cream Pies

1. Preheat your oven to 350 degrees F. In your stand mixer, cream together 1 and 1/4 cups of softened butter, 1 cup of dark brown sugar and 1/2 cup of granulated sugar.

2. Add in 1 egg and 2 teaspoons of vanilla extract. Beat until incorporated.

3. In a separate bowl, sift together 1 and 1/2 cups of all purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg. Stir in 3 cups of quick cooking oats.

 4. Add the dry ingredients to the wet ingredients and mix until combined.

6. Line a couple of cookie sheets with parchment paper or spray with non-stick cooking spray. I like to use a small cookie scoop for this, but take a couple of tablespoons of dough and drop it onto your cookie sheet, spacing the cookies a couple of inches apart.

This is a well loved pan :)

7. Using clean hands, lightly press down the center of your cookie dough just enough to reduce the "peak" of the dough ball.

8. Bake in the center of the oven for 8-10 minutes, or until the edges start to turn light golden brown. Remove from the oven and allow to rest on the pan for a few minutes to finish baking, and then move to a cooling rack.

While your cookies cool, it's a good time to whip up the filling.

1. In your mixing bowl, whip together 1 cup of softened butter, 2 cups of powdered sugar, 7 ounces of marshmallow cream, and 2 teaspoons of vanilla.

See? I told ya. This recipe is ree-donk-u-lous!

So, once your cookies..err, um...pies have cooled and your filling is whipped and fluffed, it's time to get these lovers together and make some magic!

I like to use the same small cookie scoop to divvy up the filling, but you can use a tablespoon.

Mound the creamy goodness in the center of one pie, put the second pie on top (bottoms together), and gently squish until the filling reaches the edges of the pie.

Soooo goooood.

Like I said, this is a family favorite. They're even better the next day. And super DUPER better with a cup of coffee.

You'll keep them stored in an air tight container if ya know what's good for ya. Stale pies...not good for ya.

My birthday girl refused to pose...or smile...or do anything that I asked, so I reminded her of my close call with death bringing her into the world. This is the look I got so I took the photo anyway.

Venison Meatloaf

I. Love. Meatloaf.

I could eat it everyday, pretty sure.

I love the flavor, texture, the sauce...

It's one of the best comfort foods out there.

My favorite meat to make it with is venison. Venison is lean, flavorful, and it's the epitome of  free range, local cuisine. I actually prefer venison over beef most of the time.


Are You A Good Help Meet For Your Husband?

More often than not, God shows me things in the garden.

Sure, watching a plant and then a vegetable emerge from a tiny seed is amazing, but I'm looking beyond that. I'm talking about the pictures that God paints for me in His creation that I stand in awe of. He shows me pictures of life, death, stewardship, faith...even marriage.

You read that right.

I said Marriage.

God has shown me beautiful pictures of marriage in the garden.

Is it a coincidence that He created the first marriage in a garden?

I am still working on the format and there appears to be a couple of kinks (Hello! Slider? Why do you hate me?) But this is all in alignment with the "re-branding" of The Caver's Wife. I plan to work on a new logo, and I am going to incorporate the font from this blog template. I love it so much!

To show you around a bit, there's a new drop down menu with new headings. I'm Just Breathing

Hey y'all!
I know that I have been MIA lately with posting videos and blog posts.

There's a good reason for that.

I just needed to breathe. 

Don't worry! I'm not going anywhere! I just needed a moment to gain some perspective.

Have you ever been working on something so closely, like putting your nose right on the canvas, that you only see little parts of your work? But then you take a step back to see the whole picture and it's a BIG. FAT. MESS?!

Yeah--that's kinda where I'm at.

Frugality is something that I strive for, not something that I have mastered.

If you listen to or read anything from the wonderful Dave Ramsey, you know that in a typical marriage, there is a Saver and there is a Spender.

I am the Spender.

Granted, I don't go out and buy things that aren't necessary, nor do I ignore the price tag. Quite the contrary. I am, however, a little more quick to spend money without thinking through all of the tiny details or hunting down the best deal.

My husband won't buy something unless he has done exhaustive research on an item and set aside the appropriate amount of funds. I don't have that kind of patience.

Does Gardening Really Save You Money?

I have been asked many times, "Does gardening really save you money?" The answer is an emphatic YES!

At my local farmer's market, a bundle of eight beets will cost $4.00, where a pack of two-hundred beet seeds will cost me $0.99. Yes, time and sweat go into it, but that's one of the most satisfying parts of gardening and you can't put a price tag on it for me. In fact, the hours that I spend in the garden save money that I would spend on a therapist or a gym membership....not that I need a therapist...


Garden Planning Around Your Pantry

In one of my recent videos, 5 Things To Consider When Planning Your Garden, I mentioned that I always ask myself "What does my family like to eat" when I am deciding on what I want to grow in my garden.

I suggested that it would be a good idea to look back in your meal planner at the meals that you have prepared for your family in the past, and then think about the ingredients that you used for each of those dishes. A lot of those ingredients can be grown and prepared in your own kitchen.


The Homestead Wife's Skill of the Month Club with Esther Emery


I got skills, but who couldn't use more skills-- or fine tune the ones that they already have?

Esther Emery is someone that I have looked up to for a couple of years. It all started when I stumbled upon her family's YouTube channel, Fouch-O-Matic Off Grid. Here was a family going after a lifestyle that seems so romantic, but at the same time, devilishly unforgiving and brutal; all of it, beautiful in it's blood, sweat, and tears.

I have grown to respect Esther immensely for her heart, her strength, and for her mad story telling skills. I look forward to finally meeting her this October where she will be a speaker at the Homesteaders of America Conference in Virginia.

Until then, us women have the opportunity to glean from Esther in a super cool way!

Esther has started a series on her self-named channel, Esther Emery called Skills of the Month. She, along with friends, will address topics ranging from preparedness to organization. There will be homework assignments! (Does that excite anyone else but me?) There is also a community being built on Facebook and you can find the link to that group in the description box of her videos. I have just watched the first lesson and got a page of notes. The second lesson has also been posted and I'm stoked that the subject is on Food Storage.

With that being said, I am going to publish this so I can get back to class. ;)
